Freezer Burn in Seafood: Causes, Signs and Prevention

Freezer burn in seafood occurs when the surface of a frozen product gradually loses moisture during storage.

The fish may remain frozen, but affected areas can become dry, pale, discolored, and less attractive after thawing.

For wholesalers and distributors, freezer burn is also a commercial concern because it can reduce product consistency and resale value.

Common Signs of Freezer Burn

Typical signs may include:

  • Dry surface areas.
  • Pale or whitish patches.
  • Uneven or faded color.
  • Firmer or drier surface texture.
  • Lower moisture retention after thawing.

The main underlying issue is surface dehydration.

As moisture is lost from the fish tissue, appearance and texture can gradually deteriorate.

Why Frozen Fish Develops Freezer Burn

Three factors are particularly important.

Inadequate packaging

Damaged, loose, or poorly sealed packaging increases exposure to cold air.

Insufficient glazing protection

A suitable ice glaze forms a protective layer over the fish surface. Uneven or damaged glazing provides less protection against dehydration.

Temperature fluctuation

Repeated temperature changes, frequent cold-room door openings, and extended handling outside controlled storage can increase quality loss.

Freezer burn is therefore not simply about how cold the warehouse is. It is also about how consistently the product remains protected throughout storage and distribution.

Three Layers of Protection

A practical prevention model is:

Product → Glaze → Packaging → Cold Storage

1. Maintain appropriate glazing

A consistent protective glaze helps reduce direct exposure of the fish surface to cold air.

2. Use suitable packaging

Packaging should remain intact and well sealed throughout storage and transportation.

3. Maintain stable frozen conditions

Frozen seafood should remain under consistent cold-chain conditions, with unnecessary temperature fluctuations minimized.

For large-volume buyers, receiving inspections can include packaging condition, glaze coverage, surface appearance, and consistency between cartons.

Freezer burn may not always make a product unusable, but it can reduce appearance, texture, and overall commercial value.

For B2B sourcing, price and size should therefore be evaluated together with glazing, packaging, frozen-storage conditions, and batch-to-batch consistency.
